Mini Lobster Rolls
The perfect appetizers, mini lobster rolls are delicious and super easy to make. Even a beginner chef can whip these up in no time.

- 3 cups cooked lobster meat cut into 1/2-inch chunks
- 1/2 cup mayonnaise
- 2 tablespoons chopped fresh chives
- 1 tablespoon fresh lemon juice
- 1 teaspoon salt or to taste
- 1/4 teaspoon cayenne or to taste
- 1/4 teaspoon Cajun seasoning
- 2 tablespoons butter softened is best
- 8 hot dog buns cut into thirds, lengthwise
In a small bowl, mix the lobster, mayonnaise, lemon juice, chives, salt, Cajun seasoning, and cayenne together.
Heat a large skillet over medium heat and brush the pan with butter. When melted, place the buns down and cook for 1 to 2 minutes per side until lightly golden. Let cool on a cooling rack.
Fill each bun with spoonfuls of the lobster mix.
Serve right away or keep chilled until serving time.
