Mini Lobster Rolls

The perfect appetizers, mini lobster rolls are delicious and super easy to make. Even a beginner chef can whip these up in no time.
Servings: 8

Ingredients 

  • 3 cups cooked lobster meat, cut into 1/2-inch chunks
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt, or to taste
  • 1/4 teaspoon cayenne, or to taste
  • 1/4 teaspoon Cajun seasoning
  • 2 tablespoons butter, softened is best
  • 8 hot dog buns, cut into thirds, lengthwise

Instructions 

  • In a small bowl, mix the lobster, mayonnaise, lemon juice, chives, salt, Cajun seasoning, and cayenne together.
  • Heat a large skillet over medium heat and brush the pan with butter. When melted, place the buns down and cook for 1 to 2 minutes per side until lightly golden. Let cool on a cooling rack.
  • Fill each bun with spoonfuls of the lobster mix.
  • Serve right away or keep chilled until serving time.
