Easy Cannelloni Pasta Recipe
This dish is a delicious solution to Meatless Monday and it’s also vegetarian-friendly. It takes about an hour to get on the table and is quite easy to make!

- 12 dried cannelloni
- 2 ½ cups marinara sauce divided
- 1 cup shredded mozzarella cheese
- Filling
- 2 cups ricotta cheese
- 2 cups chopped spinach
- 2 eggs
- ½ cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- 1 teaspoon Italian seasoning
Preheat the oven to 350°F.
Mix all of the filling ingredients together in a small bowl. Place into a piping bag or a large resealable bag and set aside.
Add ⅓ cup water to the marinara sauce and place ½ cup of the sauce in the bottom of a 9x13 pan.
Snip off the corner of the zipper bag if using and fill each cannelloni. Place the cannelloni in the pan and top with the remaining marinara sauce.
Cover and bake for 40 minutes. Add cheese and bake covered for an additional 15-20 minutes until the cannelloni is tender.
