Easy Cannelloni Pasta Recipe

This dish is a delicious solution to Meatless Monday and it’s also vegetarian-friendly. It takes about an hour to get on the table and is quite easy to make!
Servings: 4

Ingredients 

  • 12 dried cannelloni
  • 2 ½ cups marinara sauce, divided
  • 1 cup shredded mozzarella cheese
  • Filling
  • 2 cups ricotta cheese
  • 2 cups chopped spinach
  • 2 eggs
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning

Instructions 

  • Preheat the oven to 350°F.
  • Mix all of the filling ingredients together in a small bowl. Place into a piping bag or a large resealable bag and set aside.
  • Add ⅓ cup water to the marinara sauce and place ½ cup of the sauce in the bottom of a 9×13 pan.
  • Snip off the corner of the zipper bag if using and fill each cannelloni. Place the cannelloni in the pan and top with the remaining marinara sauce.
  • Cover and bake for 40 minutes. Add cheese and bake covered for an additional 15-20 minutes until the cannelloni is tender.
