Green Bell Pepper Fajita Stir Fry Recipe
Fajitas are a tasty meal that can be enjoyed with or without meat. This Chipotle copycat has all of the familiar flavors you love. Serve it with warm tortillas or as a side for dinner!

- 3 tablespoons olive oil
- 2 green bell peppers thinly sliced
- 1 large red onion thinly sliced
- 1/2 teaspoon dried oregano
- salt to taste
In a large non-stick skillet over medium-high heat, heat oil until it’s shimmering and very hot.
Add sliced bell pepper and red onions.
Toss them around and cook for about 5 minutes. Stir occasionally.
Season with oregano and salt to taste. Stir and cook for about 2 more minutes until the veggies are slightly softened but still look bright.
Remove from heat. Serve and enjoy!
