- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 2 teaspoons baking soda
- 2 cups buttermilk
- 1/2 cup plus 1 tablespoon vegetable oil
- 2 large eggs
In a large bowl mix together the flour, sugar, baking powder, baking soda and salt.
In a separate bowl, whisk the eggs, oil and milk.
Pour the wet mixture into the dry and stir until well combined. Let the mixture stand for 20-30 minutes until the batter begins to get fluffy.
Heat a griddle or a skillet over medium-high heat. Oil the surface of the griddle and heat until a couple droplets of water sizzle.
Measure a ¼ cup of batter and cook the pancake for about 2 minutes until the top begins to form bubbles and the bottom is golden brown. Gently flip the pancake and cook for about 2 minutes until golden brown on the other side.
Serve hot and enjoy and with your favorite toppings!
