Easy Breakfast Skillet Bacon Egg and Potato Recipe

Ingredients

  • 4 strips cooked bacon crumbled
  • 1 onion chopped
  • 2 teaspoons minced garlic
  • 1 tablespoon olive oil
  • 4 medium potatoes diced
  • salt and pepper to taste
  • ½ teaspoon garlic powder
  • 4 eggs
  • 1 cup shredded cheddar cheese
  • optional chopped green onions

Instructions

  • Add half a tablespoon of olive oil to the skillet. Once hot, add the garlic and onions. Sautée for about 2 minutes until the onions begin to soften and the garlic is fragrant.
  • Add the remaining olive oil and chopped potatoes to the skillet and cook on medium heat until browned.
  • Season with salt, pepper, and garlic powder, stirring occasionally to prevent sticking. Cook until the potatoes are soft.
  • Using a wooden spoon, spread the potatoes out to make four holes. Crack an egg into each hole and season with salt and pepper.
  • Sprinkle the shredded cheddar cheese over the potatoes and eggs.
  • Cover the skillet with a lid and cook until the egg whites are completely set and the yolks begin to thicken. When the eggs are done and the cheese is melted, sprinkle with the crumbled bacon, chopped green onions and additional cheese.
