Easy Baked Sablefish Recipe
In this simple recipe, the sablefish is seasoned and then baked to perfection. Serve it with steamed rice and stir-fried veggies!

- 4 fillets black cod
- salt and freshly ground pepper to taste
- 2 tablespoons brown sugar
- 3 tablespoons lime juice
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- nonstick cooking spray
Preheat the oven to 425°F. Coat a baking dish with nonstick cooking spray. Place the fish in the prepared dish and season with salt and pepper.
Meanwhile, bring brown sugar, lime juice, vinegar, soy sauce, and a pinch of salt to a boil in a small saucepan over medium heat. Simmer for 4 to 5 minutes, or until thick and syrupy. Spread 1 teaspoon glaze evenly over each cod filet; reserve any remaining glaze.
Place baking dish in oven and bake for 12 minutes, or until opaque and just cooked through. Serve with reserved glaze and garnished with mint and scallions.
