- 7 ounces surimi crab roughly chopped
- 1/2 avocado cubed
- 1 stalk celery diced
- 1/2 cucumber diced
- 2 cups cooked corn kernels
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- salt and pepper to taste
Combine the mayonnaise and lemon juice in a small mixing bowl and stir well until combined.
Add a pinch of salt and pepper and stir again to combine.
In a large mixing bowl, add the remaining ingredients.
Add the mayo mixture and stir, and chill before serving.
