Ingredients

  • 7 ounces surimi crab roughly chopped
  • 1/2 avocado cubed
  • 1 stalk celery diced
  • 1/2 cucumber diced
  • 2 cups cooked corn kernels
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • salt and pepper to taste

Instructions

  • Combine the mayonnaise and lemon juice in a small mixing bowl and stir well until combined.
  • Add a pinch of salt and pepper and stir again to combine.
  • In a large mixing bowl, add the remaining ingredients.
  • Add the mayo mixture and stir, and chill before serving.
