Traditional Swedish Cheesecake

- 2 eggs
- ¼ cup sugar
- ¼ cup almond flour
- 3 tablespoon rice flour
- 1 cup half and half
- 1 ¼ cup cottage cheese
- your favorite toppings
Preheat the oven to 350 degrees F. Grease an 8-inch cake pan and set aside.
Combine the eggs and sugar in a blender.
Mix together the ground almonds, rice flour, half-and-half, and cottage cheese.
Add the batter to the baking pan and bake for about 1 hour, or until the surface just starts to brown.
Remove the cheesecake from the oven and allow it to cool.
Serve with your favorite toppings and enjoy!
