Traditional Swedish Cheesecake

Ingredients 

  • 2 eggs
  • ¼ cup sugar
  • ¼ cup almond flour
  • 3 tablespoon rice flour
  • 1 cup half and half
  • 1 ¼ cup cottage cheese
  • your favorite toppings

Instructions 

  • Preheat the oven to 350 degrees F. Grease an 8-inch cake pan and set aside.
  • Combine the eggs and sugar in a blender.
  • Mix together the ground almonds, rice flour, half-and-half, and cottage cheese.
  • Add the batter to the baking pan and bake for about 1 hour, or until the surface just starts to brown.
  • Remove the cheesecake from the oven and allow it to cool.
  • Serve with your favorite toppings and enjoy!
