Leftover Prime Rib Sandwich

- 1/2 pound leftover prime rib sliced
- 1 cup bell peppers or capsicum sliced
- 1 onion sliced
- 1 small baguette cut in half
- 2 tablespoons butter
Sauce
- 1 head garlic roasted
- ¼ cup sour cream
- 1 teaspoon thyme
- 1 teaspoon horseradish creamed
- ½ teaspoon balsamic vinegar
- salt and pepper to taste
Make the sauce
In a blender, pulse the roasted garlic and mix in the sour cream, horseradish, and vinegar.
Stir in the thyme and add the salt and pepper, and set aside.
Prepare the vegetables
On a skillet over medium heat, melt the butter.
Add the onions and saute until the onions are translucent, before reducing the heat to low.
Toss in the bell peppers or capsicum and toss for 5 minutes.
Remove from the heat and let the vegetables return to room temperature.
Assemble the sandwich
Slice the baguette horizontally, but not all the way and open it up.
Lather the inside of the bread with the sauce.
Place a layer of the vegetable mix over the sauce on the bread, followed by a slice or two of the prime rib.
Close the baguette around the sandwich and serve. Enjoy!
