Leftover Prime Rib Sandwich
Ingredients
- 1/2 pound leftover prime rib, sliced
- 1 cup bell peppers or capsicum, sliced
- 1 onion, sliced
- 1 small baguette, cut in half
- 2 tablespoons butter
Sauce
- 1 head garlic, roasted
- ¼ cup sour cream
- 1 teaspoon thyme
- 1 teaspoon horseradish, creamed
- ½ teaspoon balsamic vinegar
- salt and pepper to taste
Instructions
Make the sauce
- In a blender, pulse the roasted garlic and mix in the sour cream, horseradish, and vinegar.
- Stir in the thyme and add the salt and pepper, and set aside.
Prepare the vegetables
- On a skillet over medium heat, melt the butter.
- Add the onions and saute until the onions are translucent, before reducing the heat to low.
- Toss in the bell peppers or capsicum and toss for 5 minutes.
- Remove from the heat and let the vegetables return to room temperature.
Assemble the sandwich
- Slice the baguette horizontally, but not all the way and open it up.
- Lather the inside of the bread with the sauce.
- Place a layer of the vegetable mix over the sauce on the bread, followed by a slice or two of the prime rib.
- Close the baguette around the sandwich and serve. Enjoy!
