Ingredients
12ozleftover rotisserie chickenshredded
2cupsegg noodles
2tablespoonsolive oil
2clovesgarlicminced
1medium oniondiced
2medium carrotspeeled and sliced thin
2stalks celerysliced
8cupschicken broth
2bay leaves
2sprigs fresh thyme
salt and pepperto taste
Instructions
In a large pot over medium heat, add the olive oil, garlic, onions, carrots and celery. Sauté for 3-5 minutes.
Add shredded rotisserie chicken, chicken broth, bay leaves and thyme. Increase the heat to high and bring the soup to a boil.
Remove chicken. Add noodles to the broth and bring to a boil, reduce heat to medium-low and simmer until noodles are tender.
Remove bay leaves and discard. Stir in the chicken.
Taste and season with salt and pepper to your preference. Serve and enjoy!
