- 2 cups white long grain rice uncooked
- 1 tablespoon unsalted butter
- 2 cans red beans do not drain
- 1/4 cup water
- 1/2 teaspoon garlic salt or more to taste
- 1/4 teaspoon onion powder
- 1 teaspoon Creole seasoning
- 1/4 teaspoon liquid smoke
In a large saucepan, bring 4 cups of water to a boil. Add the rice and butter and reduce to a simmer. Cover the saucepan and cook for 15-20 minutes or until the rice is cooked.
Empty the beans and the liquid from the can into a large pot. Use a potato masher to crush some of the beans, ensuring that most are left whole.
Add the water, garlic salt, onion powder, creole seasoning, and liquid smoke to the beans. Stir to combine.
Simmer over medium-low heat for about 15 minutes or until the beans start to soften. Stir the mixture occasionally to ensure that the beans don’t stick.
Transfer the beans to serving bowls and top with a scoop of rice.
