Ingredients

  • 2 cups white long grain rice uncooked
  • 1 tablespoon unsalted butter
  • 2 cans red beans do not drain
  • 1/4 cup water
  • 1/2 teaspoon garlic salt or more to taste
  • 1/4 teaspoon onion powder
  • 1 teaspoon Creole seasoning
  • 1/4 teaspoon liquid smoke

Instructions

  • In a large saucepan, bring 4 cups of water to a boil. Add the rice and butter and reduce to a simmer. Cover the saucepan and cook for 15-20 minutes or until the rice is cooked.
  • Empty the beans and the liquid from the can into a large pot. Use a potato masher to crush some of the beans, ensuring that most are left whole.
  • Add the water, garlic salt, onion powder, creole seasoning, and liquid smoke to the beans. Stir to combine.
  • Simmer over medium-low heat for about 15 minutes or until the beans start to soften. Stir the mixture occasionally to ensure that the beans don’t stick.
  • Transfer the beans to serving bowls and top with a scoop of rice.
