Preheat the toaster oven to bake at 400°F and set the timer to the desired minutes. As a guide, set it between 35 to 75 minutes depending on the size of the potatoes.
If using the convection setting, set the toaster oven to 375°F instead and the timer to between 30-60 minutes depending on the size of the potatoes.
Scrub the potatoes well with water and thoroughly pat them dry with paper towels.
Coat the skins of the potatoes with olive oil using a pastry brush and sprinkle with salt and pepper. Pierce the skins several times with the tines of a fork or a skewer to allow steam to escape.
Place the potatoes on the middle rack of the toaster oven to bake. There’s no need to flip or rotate the potatoes.
Wearing an oven mitt, give the potatoes a squeeze to test for doneness after about 35 minutes for small potatoes. If they still feel firm, let them bake for another 10 minutes or so and test again.
Insert a fork or a thin sharp knife into the center of the potatoes to confirm that they’re done.
Remove the potatoes from the toaster oven and slice open. Top with a pinch of salt and pepper, butter, sour cream, and chopped green onions if desired.
