Lemon Pie Filling Recipe
Lemon pie filling is one of the best things about lemon meringue pie! It’s tart, tangy, and just sweet enough.

- 1/4 cup concentrated lemon juice
- 1 1/2 cups sugar
- 1/3 cup cornstarch
- 1 1/2 cups cold water
- 1 egg
In a small saucepan, mix together the water and cornstarch.
When the cornstarch dissolves, add the sugar, lemon juice, and a slightly beaten egg.
Cook over medium heat, stirring constantly until the mixture thickens and comes to a boil.
If using food coloring, add it in this step.
Remove the thickened lemon mixture from the heat.
Let the filling cool before using.
