In a medium bowl, mix together the flour, salt and sugar until well mixed. If you’re using cinnamon, add it as well.
Carefully separate the egg yolks and egg whites and place them into separate bowls.
Whisk the egg yolks and add the milk, vanilla extract if using, and oil. Mix until combined.
Slowly add the egg yolk mixture to the flour mixture.
Mix until well combined and the batter is smooth without any lumps.
In another bowl, whip the egg whites using an electric mixer until soft peaks are formed. Make sure there is no trace of egg yolk or the whites won’t whip.
Continue to whip the egg whites with the mixer for 2 to 3 minutes starting from the lowest speed and gradually increasing to the highest speed.
Immediately fold the beaten egg whites into the batter and gently mix until evenly combined.
The batter is now ready to make the pancakes.
