Easy Kielbasa Sausage and Sauerkraut Hash Recipe

Ingredients

  • 1 1/2 lbs about 2 large size russet potatoes, washed and diced into ½” cubes
  • 1 lb Polish sausage smoked or fresh
  • 1 onion sliced into 1” pieces
  • 1 c sauerkraut
  • 1 Tbsp unsalted butter
  • ½ tsp ground black pepper
  • ¼ tsp salt

Instructions

  • Cover the potato cubes with water in a big saucepan and let it cook for 5-7 minutes, or until just barely soft. Drain and set aside.
  • Combine the sausages and 1/2 cup water in a large nonstick skillet. Cook the sausages until the water has evaporated over medium heat. The sausage should then be pan-fried until browned, for bout 7-10 minutes. Take out the sausages from the pan.
  • If the sausages did not produce a lot of grease, melt 1 teaspoon of butter in the pan.
  • Sauté the onions and sauerkraut until dry and golden for about 3-5 minutes. Arrange the onion mixture to one side of the pan.
  • Add the boiled potatoes and the remaining 2 teaspoons of butter to the empty side of the pan. Toss the potatoes gently into the hot butter before combining all of the ingredients in the pan.
  • Allow the mixture to fry and stir every 1-2 minutes, until the potatoes are golden and crisp, about 4-5 minutes.
  • Season the hash with salt and pepper, if desired.
  • Return the sausage to the pan and let it warm up for another 1-2 minutes. Serve immediately!
