Sautéed Yellow Squash Recipe

This simple sauteed squash is ready to enjoy in just 16 minutes. The squash is perfectly tender and is seasoned with fresh thyme and basil.
Cook: 10 minutes
Servings: 4

Ingredients 

  • 3 yellow summer squash
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Fresh basil & thyme , for garnish, optional
  • 1 teaspoon minced garlic
  • 2 tablespoons parsley, finely chopped
  • Salt and pepper , to taste

Instructions 

  • Slice the squash into ¼-inch rounds. If the squash is large, slice the rounds into half-moons.
  • In a jar with a tight-fitting lid, combine the lemon juice, olive oil, garlic, parsley, salt, and pepper. Shake well to combine.
  • Heat a large skillet over medium heat with a few drizzles of olive oil. Add the squash and sauté for about 7 to 10 minutes, stirring occasionally so that all sides are cooked. Remove from the skillet and toss with the sauce
