What Is Xanthan Gum?

Xanthan gum is a powdery white substance that’s often used as a thickening agent, stabilizer, and emulsifier. It’s made by fermenting a carbohydrate with a bacteria called xanthomonas campestris. Many recipes for gluten-free baked goods call for xanthan gum.

Egg Whites

Egg whites are a good substitute for xanthan gum if you’re not concerned about using animal products. They add an airy texture to baked goods and can take on the role of both binding and leavening. Use one egg white to replace every one tablespoon of xanthan gum called for in a recipe. 

Corn Starch

Corn starch is easily sourced at grocery stores and is an excellent replacement for xanthan gum. Use corn starch at a ratio of 1:1 to replace xanthan gum. It’s an especially good option to use as a thickener for gravies and stews. 

Unflavored Gelatin

Unflavored Gelatin

Unflavored gelatin can be used to bind and thicken foods and is a good option for baked goods. Note that it is a by-product of animal products. Use unflavored gelatin at a ratio of 2:1. 

 Arrowroot Flour

Arrowroot Flour

Arrowroot is a powder that’s quite similar to cornstarch. It can be used as a thickener for sauces and soups as well as in baked goods. Note that in baking, the end result might be crispier. Use arrowroot at a ratio of 1:1. 

Chia Seeds

Whole chia seeds add texture to dishes so you’ll need to grind them if you prefer a smoother texture. Use chia seeds at a 1:1 ratio. 

Agar Agar

Agar Agar is a vegan-friendly type of gelatin that’s made from red algae. Note that baked goods tend to be denser and stiffer when made with agar agar. Use it at a 1:1 ratio.
