Peach Compote Recipe (+VIDEO)

Sweet and delicious peach compote made with fresh peaches, perfect with French toast, cakes, pancakes, waffles, and ice cream.

Ingredients

  • 1 pound fresh or frozen peaches
  • 2 tablespoons sugar (you can add more if you prefer a sweeter compote)
  • 2 tablespoons lemon juice (it’s best to use the juice from the fresh lemon)

Instructions

  • Rinse the peaches and remove the seeds. Dice them into smaller pieces.
  • Juice the lemon.
  • Add the diced peach, sugar and lemon juice in a small saucepan and bring to medium heat.
  • Once bubbling, reduce heat to medium-low and cook for about 10 minutes. Stir from time to time. (Taste your compote and gradually add more sugar if necessary.)
  • Remove from heat when the mixture thickens. Transfer it to a clean jar. (If you want to thicken the mixture faster, mix together 1 tbsp of cornstarch and 1 tbsp of water, and add the slurry to the mixture.)
  • You can serve the warm compote with French toast, waffles, and pancakes. Or cold compote with ice cream, yogurt, sundaes, or oatmeal. Let it cool thoroughly before storing in the fridge.

Notes

  • Choose ripe peaches (but not over-ripe) as they’re sweeter and takes less time to cook. Yellow peaches will give you a better color than white peaches.
