Easy Breakfast Egg Rolls Recipe

Ingredients

  • 4 eggs
  • salt and pepper to taste
  • 1 teaspoon butter
  • 1/2 cup cheddar cheese shredded
  • 4 slices cooked bacon crumbled
  • 4 egg roll wrappers
  • olive oil to brush the egg rolls

Instructions

  • Preheat the oven to 425°F. Set aside a baking sheet.
  • Place the eggs into a small bowl and add salt and pepper to taste. Whisk until well blended.
  • Add the butter to a medium skillet over medium heat.
  • Add the eggs to the skillet and sprinkle with the cheddar cheese and bacon. Cook, stirring often, until the eggs are scrambled and cooked through.
  • Place an egg roll wrapper on a flat surface and arrange so that one of the points is facing you. Brush the edges of the wrapper with water.
  • Place 1/4 of the egg mixture onto the center of the wrapper. Fold in the left and right corners, then fold the bottom corner up. Roll the egg roll away from you and seal the top point with more water, if needed. Repeat with the remaining 3 wrappers.
  • Place the egg rolls on the baking sheet and lightly brush both sides with olive oil.
  • Bake for 12-15 minutes or until the egg rolls are golden brown.
