Optional For Serving
- fresh lemon wedges
- fresh parsley minced
Preheat a grill pan to 375°F. Meanwhile, use a paper towel to pat dry the fish fillets.
Use the oil to rub or brush the fillets and then season both sides with Old Bay and paprika.
Skin side down, place the fish on the hot grill. (If there is no skin, start on either side.)
With the lid closed, grill the fish for 3 minutes. Flip the fish over using a spatula and cook for a further 2 to 4 minutes (depending on the thickness). The fish is ready if it’s springy to the touch, or if it reads 145°F when you insert an instant-read thermometer into the center.
Plate the grilled sea bass and serve with a sprinkling of lemon juice and fresh parsley.
