Ingredients

Optional For Serving

  • fresh lemon wedges
  • fresh parsley minced

Instructions

  • Preheat a grill pan to 375°F. Meanwhile, use a paper towel to pat dry the fish fillets.
  • Use the oil to rub or brush the fillets and then season both sides with Old Bay and paprika.
  • Skin side down, place the fish on the hot grill. (If there is no skin, start on either side.)
  • With the lid closed, grill the fish for 3 minutes. Flip the fish over using a spatula and cook for a further 2 to 4 minutes (depending on the thickness). The fish is ready if it’s springy to the touch, or if it reads 145°F when you insert an instant-read thermometer into the center.
  • Plate the grilled sea bass and serve with a sprinkling of lemon juice and fresh parsley.
