Chicken Scarpariello Recipe

Chicken scarpariello is a hearty Italian dish that’s comforting and flavorful. It’s a delicious combination of chicken thighs, Italian sausage, bell peppers and seasonings.

Ingredients

  • 2 lbs chicken thighs
  • 3 Italian sausages
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • salt and pepper to taste
  • all-purpose flour for dusting
  • 2 tablespoons unsalted butter
  • 1 medium onion sliced
  • 1 tablespoon garlic minced
  • 2 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary minced
  • 1 cup white wine
  • 1 cup chicken stock
  • 2 tablespoons fresh lemon juice
  • 1 medium red bell pepper sliced
  • 1/3 cup peppadew peppers sliced

Instructions

Cook the Meat

  • Preheat the oven to 375℉.
  • Pat the chicken thighs dry with paper towels and place them into a bowl. Rub the thighs with salt, pepper, and Italian seasoning and set them aside. For juicier chicken, do this step a couple of hours before cooking.
  • Heat 1 tablespoon of the olive oil, and sear the chicken in a pan for about 5-6 minutes per side until lightly browned. Set aside.
  • In the same skillet, heat the remaining oil and add the sausage. Cook until the sausage is nicely brown all over, turning occasionally. Remove and slice into large chunks.

Make Scarpariello Sauce

  • Drain any excess oil from the pan and melt the butter. Add the onions, garlic, thyme, and rosemary, and sauté for about 3-4 minutes.
  • Pour in the white wine, chicken broth, and lemon juice. As the liquid heats, scrape up any brown bits from the bottom and sides of the pan with a wooden spoon. Stir in the bell pepper and the peppadew peppers.
  • Nestle the chicken and sausage into the onion mixture.
  • Bring to a boil over medium-high heat and then place the pan into the oven.

Bake Chicken Scarpariello

  • Bake uncovered for about 25-30 minutes or until the chicken registers 165°F on an instant-read thermometer. Let the chicken rest for 10 minutes and then serve.
