Ingredients

For the Meatloaf

  • 2 pounds ground beef we recommend 80% lean
  • 2 teaspoons olive oil
  • ½ cup onion finely diced
  • ½ cup bell pepper finely diced
  • 1 cup Ritz crackers crushed
  • 2 eggs beaten
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup whole milk
  • Salt and pepper to taste (we use 1/2 teaspoon for each)

For the Topping

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon yellow mustard

Instructions

  • Preheat the oven to 350°F. Lining a loaf pan with parchment paper. Set aside.
  • Add oil to a large skillet over medium heat. Sauté the diced peppers and onions until softened, about 5 minutes. Set aside and let cool.
  • Combine the whisked eggs, crushed crackers, onions, bell peppers, cheese, milk, salt, and pepper in a large bowl.
  • Add the ground beef and mix until just combined. Don't overwork the meat.
  • Form the mixture into a loaf and place it into a loaf pan.
  • Bake for 30 minutes.
  • Combine the topping ingredients and set aside while the meatloaf bakes.
  • Remove the meatloaf and brush with the topping.
  • Bake for an additional 30-40 minutes. (Remove from the oven when it reaches 155°F.)
  • Let it rest for 10-15 minutes in the loaf pan. Serve with your favorite sides and enjoy!

Notes

  • A loaf pan lined with parchment paper will make it easier to lift the loaf from the pan.
  • Remove from the oven when it reaches 155°F. The temperature will continue to rise during resting.
