For the Meatloaf
- 2 pounds ground beef we recommend 80% lean
- 2 teaspoons olive oil
- ½ cup onion finely diced
- ½ cup bell pepper finely diced
- 1 cup Ritz crackers crushed
- 2 eggs beaten
- 1 cup sharp cheddar cheese shredded
- 1/2 cup whole milk
- Salt and pepper to taste (we use 1/2 teaspoon for each)
For the Topping
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon yellow mustard
Preheat the oven to 350°F. Lining a loaf pan with parchment paper. Set aside.
Add oil to a large skillet over medium heat. Sauté the diced peppers and onions until softened, about 5 minutes. Set aside and let cool.
Combine the whisked eggs, crushed crackers, onions, bell peppers, cheese, milk, salt, and pepper in a large bowl.
Add the ground beef and mix until just combined. Don't overwork the meat.
Form the mixture into a loaf and place it into a loaf pan.
Bake for 30 minutes.
Combine the topping ingredients and set aside while the meatloaf bakes.
Remove the meatloaf and brush with the topping.
Bake for an additional 30-40 minutes. (Remove from the oven when it reaches 155°F.)
Let it rest for 10-15 minutes in the loaf pan. Serve with your favorite sides and enjoy!
- A loaf pan lined with parchment paper will make it easier to lift the loaf from the pan.
- Remove from the oven when it reaches 155°F. The temperature will continue to rise during resting.
