Healthy Side Dishes: Microwave Cauliflower Fried Rice Recipe

Ingredients

  • 1 medium head cauliflower
  • 2 cups mixed vegetables fresh or frozen
  • 3 large eggs beaten
  • salt and pepper to taste
  • 1/2 teaspoon Asian sesame oil
  • chopped green onion

Instructions

  • Shred the cauliflower into coarse breadcrumb-size pieces using a grater.
  • Transfer the rice to a large paper towel or kitchen towel, squeezing to remove any excess moisture.
  • In a large microwave-safe bowl, add cauliflower rice and mixed vegetables. Cover with a lid or plastic wrap and cook on high for 2 minutes.
  • Beat the eggs in another bowl, and add it on top of the cauliflower rice.
  • Cover with the lid or plastic wrap, and microwave on high for 45 seconds (the eggs will be half-cooked at this point).
