1 pound strawberries sliced 1/4 cup water 1 ½ teaspoons lemon juice 1/4 cup sugar For thickening the sauce 1 tablespoon corn starch 1 tablespoon water
Make Strawberry Sauce In a large saucepan over high heat, add strawberries, water, sugar, and lemon juice. Stir to mix and bring it to a boil.
Reduce the heat and simmer for 10 minutes or until the strawberries become soft.
Remove from heat and blend the strawberries gently (I used immersion blender.)
Strain the mixture through a strainer.
Then pour the liquid back to the saucepan on low heat.
Thicken the Sauce In a small bowl, mix together corn starch with 1 tablespoon of water.
Pour the corn starch slurry into the simmering strawberry sauce. Stir constantly.
Increase the heat to high, keep whisking for about 5 minutes or until it thickens into a glaze.
Remove from heat, and pour it into a bowl or container to cool down.
Once it comes down to room temperature, store it in the refrigerator. Serve it as a topping for cheesecake, donuts, and pie, etc.
Add sugar gradually until you reach desired sweetness.
Note that the sauce will become thicker once cooled.
If you prefer to have a brighter color, you can add red food coloring to your sauce.
