- 2 cups heavy cream
- 2 teaspoons erythritol
- 1/4 teaspoon vanilla extract
Pour heavy cream and erythritol into a very large mixing bowl.
With a hand mixer on a low setting, begin to whip the cream. Gradually increase the speed to avoid splashing cream.
Add vanilla extract after 2 minutes of whipping. Continue to whip some more until soft peaks begin to form.
