Ingredients

  • 1 can black beans drained and rinsed
  • 1 can corn niblets drained
  • 3 jalapeno peppers seeded and diced
  • 2 large tomatoes diced
  • ½ medium red onion diced
  • cup cilantro chopped
  • ¼ cup extra virgin olive oil
  • ¼ cup lime juice
  • ½ teaspoon cumin powder
  • salt to taste

Instructions

  • Place all of the ingredients into a medium bowl.
  • Stir well until combined.
  • Add additional salt if needed.
  • Serve with crunchy tortilla chips, and enjoy!
