- 1 can black beans drained and rinsed
- 1 can corn niblets drained
- 3 jalapeno peppers seeded and diced
- 2 large tomatoes diced
- ½ medium red onion diced
- ⅓ cup cilantro chopped
- ¼ cup extra virgin olive oil
- ¼ cup lime juice
- ½ teaspoon cumin powder
- salt to taste
Place all of the ingredients into a medium bowl.
Stir well until combined.
Add additional salt if needed.
Serve with crunchy tortilla chips, and enjoy!
