Ingredients

For the salad

  • 5 ounces fresh baby spinach
  • 2 apples cored and sliced
  • 1/2 small red onion sliced
  • 1/2 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 3 ounces crumbled goat cheese

For the dressing

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon minced garlic
  • salt and pepper to taste

Instructions

  • Add the olive oil, vinegar, honey, and Dijon mustard to a mason jar. Add minced garlic, salt and pepper and shake vigorously to make your vinaigrette.
  • In a large bowl, add spinach, apple slices, red onion, dried cranberries and walnuts. Next, add half of the goat cheese and toss the salad..
