- 2 cups fresh cilantro
- 2 tablespoons red wine vinegar
- 3 cloves garlic peeled
- 1/2 small red onion peeled and cut into chunks
- 2 teaspoons dried oregano
- 2 teaspoons red pepper flakes
- 1 cup olive oil divided
- salt and pepper to taste
To a blender or food processor, add the cilantro, vinegar, garlic, onion, oregano, red pepper flakes, and 1/2 of the olive oil.
Pulse to mince and combine the ingredients.
Add the rest of the olive oil and gently stir to combine.
Transfer the sauce to a mason jar and set it aside at room temperature for 20 minutes to let the flavors meld.
