Ingredients

  • 5 pounds ribeye roast
  • 4 tablespoons butter melted
  • 2 tablespoons garlic minced
  • 2 tablespoons Italian seasoning
  • salt to taste

Instructions

  • Preheat the oven to 450°F.
  • Place the roast in a shallow roasting pan with the fat side facing up. Cover the roast with melted butter.
  • In a small bowl, mix the garlic, Italian seasoning, and salt. Rub this mixture all over the roast.
  • Bake the roast in the oven for 15 minutes, then reduce the heat to 325ºF and continue roasting for approximately 2 hours, or until the roast reaches the desired doneness.
  • For rare ribeye roast, the internal temperature should be 105-110ºF. For medium-rare to medium, the internal temperature should be 120-125ºF. For well done, the internal temperature should be 130-135ºF.
  • Place the roast on a cutting board or cooling rack and tent it with foil. Set it aside to rest for 15-30 minutes.
  • Slice across the grain, serve, and enjoy!
