Roasted Red Potatoes Recipe
These roasted red potatoes are tender on the inside, crispy on the outside, and coated in a delicious combination of garlic, herbs and Parmesan cheese. They’re the perfect dish to serve alongside chicken, beef, pork, or fish.

- 1/4 cup olive oil
- 2 teaspoons garlic minced
- salt and pepper to taste
- 1 teaspoon Italian seasoning
- 1/4 cup finely grated Parmesan cheese
- 1 1/2 pounds baby red potatoes halved
- 2 tablespoons fresh chives chopped
Preheat the oven to 400°F. Line a sheet pan with foil and coat the foil with cooking spray.
In a large bowl, combine the olive oil, garlic, salt, pepper, Italian seasoning and Parmesan cheese. Stir and then add the potatoes. Toss to coat.
In a single layer, spread the potatoes on the prepared baking sheet. Bake, stirring occasionally, for 35-40 minutes or until tender and golden brown. Sprinkle with the chopped chives and serve.
