Truffle Pasta Recipe

- 1 lb your favorite pasta
- 1/2 cup unsalted butter
- 1/2 cup grated parmesan
- 1-2 fresh black truffles grated
- salt and pepper to taste
Cook the pasta al dente according to the package instructions. Reserve ½ cup of the pasta water.
Heat a large heavy-bottomed skillet over medium-low heat. Add the butter and let it melt.
Add about 1/3 cup of the pasta water to the butter. Stir gently over low heat until the mixture becomes slightly emulsified.
Add the parmesan and gently stir continuously over low heat until it melts and is smooth.
Add half of the grated truffles and another splash of the pasta water. Turn off the heat and let the flavors meld for a minute or so.
Drain the pasta well and add it to the skillet. Stir gently to combine and season with salt and pepper. Serve immediately topped with the remaining black truffle shavings.
