- 1 cup quinoa
- 2 cups water
- 2 teaspoons soy sauce
- 2 teaspoons minced garlic
- 1 cup mixed veggies such as bell peppers, carrots, and cucumber
- 1 egg
- 1 tablespoon oil
- salt and pepper to taste
Cook Quinoa
Add quinoa and water to a pot over medium heat. Cook it uncovered until all of the water has been absorbed.
Remove the pot from the heat and cover with a lid for 5 minutes to let the quinoa steam. The quinoa will pop and become fluffy.
Cook the Veggies and Egg
Saute the veggies in a small frying pan until tender. (You can also use raw veggies if you prefer). Add the garlic and saute for 30 seconds to 1 minute. Watch it carefully so it doesn’t burn.
Push the veggies to one side of the hot pan and add the egg. Scramble the egg until cooked and mix with the veggies. If the mixture seems dry, add a teaspoon of butter or oil.
Make Quinoa Fried Rice
Add a sprinkle of garlic powder or your seasoning of choice to the quinoa. Fluff with a fork and add the quinoa into the pan with the veggies.
Add the soy sauce and stir well.
Season with salt and pepper to taste and pan fry for a few minutes. Serve and enjoy!
