Quinoa Fried Rice Recipe

If you love fried rice, give this quinoa fried rice a try! It doesn’t contain any rice but it is full of healthy fiber and delicious flavors.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 teaspoons soy sauce
  • 2 teaspoons minced garlic
  • 1 cup mixed veggies such as bell peppers, carrots, and cucumber
  • 1 egg
  • 1 tablespoon oil
  • salt and pepper to taste

Instructions

Cook Quinoa

  • Add quinoa and water to a pot over medium heat. Cook it uncovered until all of the water has been absorbed.
  • Remove the pot from the heat and cover with a lid for 5 minutes to let the quinoa steam. The quinoa will pop and become fluffy.

Cook the Veggies and Egg

  • Saute the veggies in a small frying pan until tender. (You can also use raw veggies if you prefer). Add the garlic and saute for 30 seconds to 1 minute. Watch it carefully so it doesn’t burn.
  • Push the veggies to one side of the hot pan and add the egg. Scramble the egg until cooked and mix with the veggies. If the mixture seems dry, add a teaspoon of butter or oil.

Make Quinoa Fried Rice

  • Add a sprinkle of garlic powder or your seasoning of choice to the quinoa. Fluff with a fork and add the quinoa into the pan with the veggies.
  • Add the soy sauce and stir well.
  • Season with salt and pepper to taste and pan fry for a few minutes. Serve and enjoy!
