Easy Roasted Beets Recipe
The next time you’re at the grocery store, pick up some beets. Whether you prefer them fresh, canned, or pickled, beets are an incredibly versatile vegetable.

- 8 fresh beets
- 2 tablespoons olive oil
- salt and pepper to taste
Preheat the oven to 375°F.
Wash the beets under cold water and cut off the tops and bottoms. Cut the beets in half and toss with olive oil, salt & pepper.
Lay out a large piece of foil and top it with a piece of parchment paper. Wrap and seal the beets. As an alternative, the beets can be placed in a greased baking dish and covered.
Roast the beets for 1 hour or until they’re tender when tested with a fork.
Using rubber gloves or paper towels, rub the beets until the skins slide off.
Serve warm with butter or chilled in salads.
