Ingredients

  • 12 oz round brie
  • 2 tbsp honey
  • 1 thyme sprig
  • crostini or crackers for serving

Instructions

  • Preheat the oven to 350°F.
  • Unwrap the brie and place it into a small, shallow ovenproof dish that’s slightly larger than the brie. If you’re not planning to serve the brie in the dish, place a piece of crumpled parchment paper on the bottom of the dish to make transferring the brie easier.
  • Place the brie in the oven and bake for 15 to 20 minutes or until melted through. If the brie is larger, or about 1 lb, increase the baking time to 25 minutes. To check for doneness, gently touch the center of the brie with your finger. It should feel very soft, like it will collapse if you press any harder.
  • If you prefer to heat the brie in a microwave, place it in a microwave-safe bowl and heat on high for about 2 minutes. Check every 30 seconds or so until the brie is soft.
  • Carefully transfer the brie to a serving plate, drizzle with honey and top with a sprig of thyme.
  • Serve immediately with crostini for scooping. Provide a knife to cut through the rind and a cheese or pate knife to scoop cheese onto crostini or crackers.
