Ingredients

  • 4 pork chops bone-in or boneless
  • 2 tbsp butter
  • 1 medium onion thinly sliced
  • 1/2 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 6 tbsp mayonnaise
  • 6 tbsp mustard
  • 4 brioche buns lightly toasted
  • salt and pepper to taste

Instructions

  • In a skillet, melt the butter over medium heat. Toss in the onion and season with salt and pepper.
  • Sauté for 6 to 8 minutes, or until the onion slices are translucent and lightly browned. Remove from the heat and set aside.
  • Season each pork chop with salt and pepper.
  • Coat the chops in flour, one at a time, making sure to shake off any excess. The chops should just be covered in a thin layer.
  • In a large skillet, heat the oil over medium heat.
  • Carefully add the pork shops once the oil is hot and pan-fry for 4 to 5 minutes on each side. The chops should be just cooked through and slightly browned on the outside. Transfer to a cooling rack.
  • On the top and bottom of each toasted bun, spread the mayonnaise and mustard.
  • Place a pork chop on each bottom bun and then pile the caramelized onions on top.
  • Add the top bun to each sandwich and serve immediately.
