Easy Vegetable Sides: Fajita Veggies Recipe

Made with only 5 simple ingredients, this Chipotle Fajita Veggies dish is healthy and loaded with caramelized onions and crispy bell peppers. It’s one of our favorite vegetable side dishes and goes with almost everything.

Ingredients

  • 3 tablespoons olive oil
  • 2 green bell peppers thinly sliced
  • 1 large red onion thinly sliced
  • 1/2 teaspoon dried oregano
  • salt to taste

Instructions

  • Add oil in a large non-stick skillet over medium-high heat.
  • Heat the oil until it’s shimmering and very hot.
  • Add sliced bell pepper and red onions.
  • Toss them around and cook for about 5 minutes. Stir occasionally.
  • Season with oregano and salt to taste. Stir and cook for about 2 more minutes until the veggies are slightly softened but still look bright.
  • Remove from heat. Serve and enjoy!
