Ingredients

For the Fillings

  • 1 pound 90% lean ground beef
  • 1/3 cup refried beans
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/4 cup mild taco sauce (plus more for serving)
  • salt and pepper to taste
  • 6 slices American cheese cut into halved diagonally
  • 2 cups shredded lettuce

For the Tacos

  • 12 soft corn tortillas (5-6 inches)
  • 1 egg beaten
  • vegetable oil for frying

Instructions

  • Place a large non-stick skillet over medium-high heat. Add ground beef and break the meat apart with a wooden spoon.
  • Cook the beef for about 6 minutes or until it’s browned, stirring occasionally. Drain the fat.
  • Add refried beans, chili powder, garlic powder, cumin, taco sauce, salt, and pepper. Stir well.
  • Spoon out about 1/12 of the mixture and place it onto the center of a corn tortilla. Fold the tortilla and seal the edges using the beaten egg.
  • In a separate skillet over medium heat, add about ¼-inch vegetable oil. Once hot add the folded tacos. Fry both sides until crispy.
  • Once cooked, transfer the tacos to a plate lined with paper towels.
  • Use a knife to open the tacos slightly and add half slice of American cheese and shredded lettuce. Drizzle with more taco sauce for serving.
