    Ingredients 

    • 4 cups cabbage cut into small pieces
    • 2 quarts vegetable broth
    • 1 tablespoon minced garlic
    • 1 yellow onion chopped
    • 3 carrots sliced
    • 3 stalks celery sliced
    • 1/2 teaspoon dried oregano
    • 28 ounces canned diced tomatoes including juice
    • 1/2 teaspoon dried basil
    • salt and pepper to taste

    Instructions 

    • Place a large pot on the stove on high heat and pour in all the ingredients.
    • Stir a few times and then bring to the boil.
    • Turn the heat down to low and simmer for 20 minutes or until the vegetables are tender.
