What Are Truffles?
Truffles are similar to mushrooms. They’re a type of fungus that grow underground, close to the roots of certain trees like hazelnut and oak. They range in size from walnut to fist-sized. Unlike mushrooms, truffles are not easily sourced.
They’re known to grow in certain areas of the world, including New Zealand, France, and Italy. Black truffles are easier to find compared to white truffles which are more rare and extremely expensive.
Ingredients You’ll Need
- your favorite pasta
- unsalted butter
- grated parmesan
- black truffles
- salt and pepper

How to Make Truffle Pasta
- Cook the pasta al dente according to the package instructions. Reserve ½ cup of the pasta water.
- Heat a large heavy-bottomed skillet over medium-low heat. Add the butter and let it melt.
- Add about 1/3 cup of the pasta water to the butter. Stir gently over low heat until the mixture becomes slightly emulsified.
- Add the parmesan and gently stir continuously over low heat until it melts and is smooth.
- Add half of the grated truffles and another splash of the pasta water. Turn off the heat and let the flavors meld for a minute or so.
- Drain the pasta well and add it to the skillet. Stir gently to combine and season with salt and pepper. Serve immediately topped with the remaining black truffle shavings.
Tips and Tricks
- Be sure to add the parmesan cheese over medium-low to low heat. This will allow the cheese to melt slowly. Continuously stir the cheese until it’s completely melted and smooth.
- Use either salted or unsalted butter. If using unsalted butter, you may need to add a pinch of salt.
How To Store Truffles?
Fresh truffles spoil very easily. It’s best to use them quickly as they will begin to spoil within 5 days. Store the truffles covered with raw rice in an airtight container in the fridge. The rice will help to keep the surface of the truffles from becoming soggy.

Truffle sauce is typically made with a combination of truffles, cream, parmesan, butter, and seasonings. It has a smooth texture and a delicious flavor that pairs well with pasta dishes. You can also serve it as a dipping sauce.
