What Is Tripe?

Tripe is the edible stomach muscle lining that comes from animals such as pigs, sheep, and cows. Tripe is very low in calories and is considered to be a healthy source of protein. 

What Does Tripe Taste Like?

Tripe gets much of its flavor from the nearby organs. It has a mild flavor that’s similar to liver and has a pleasant chewy texture when properly cooked. Undercooked tripe can be quite tough. 

How to Prepare Tripe

Tripe purchased from the butcher has typically been soaked in brine, bleached, and boiled. You’ll need to scrub the tripe with vinegar and rock salt to remove any remaining impurities. After soaking it in cold water for 5-10 minutes, rinse the tripe well and cut it into pieces. At this point you’re ready to cook the tripe in boiling water for 1-2 hours until tender.

Ingredients You’ll Need

  • honeycomb tripe
  • olive oil
  • red onion
  • celery
  • garlic
  • wine
  • tomato sauce
  • red peppers
  • parmesan
  • Optional herbs

How to Cook Beef Tripe

  • Add tripe into a deep pan and cover with water. Bring to a simmer and add salt. 
  • Let it continue to simmer, covered, for 1-2 hours until tender.  
  • Sauté the onion, garlic and dried red peppers in olive oil, just to add a bit of color to the oil. Add the celery and cook for about 5 minutes. Remove from the heat and set aside. 
  • When the tripe is tender, add it to the pan with the other ingredients and stir over medium-high heat. Add the wine and reduce. 
  • Add the tomato sauce, return to a simmer, and cover for about 30 minutes. Taste and add salt if needed.
  • Combine the grated parmesan cheese in a bowl with the optional herbs. Serve the tripe topped with the cheese mixture.

  • Tripe stir-fry: After boiling, tripe can be stir-fried with garlic, ginger, and scallions. 
  • Sausage: Popular sausages including breakfast sausage and French andouille sausage include tripe in the meat mix.

Tripe is an excellent source of lean protein, vitamins and minerals. It has many beneficial nutrients such as vitamin B12, zinc, and selenium.

Easy Tripe Soup Recipe

Servings: 4

Ingredients 

  • 1 pound honeycomb tripe, rinsed and sliced into thin strips
  • 1 tablespoon olive oil
  • 1/2 red onion, chopped
  • 3 stalks celery, thinly sliced
  • 3 cloves of garlic, minced
  • 1/3 cup wine
  • 3/4 cup tomato sauce
  • 2 dried red peppers
  • 1/2 cup parmesan, grated
  • Optional herbs

Instructions 

  • Place the tripe into a deep pan and cover with water. Bring to a simmer and add some coarse salt.
  • Let it continue to simmer, covered, for 1-2 hours until tender.
  • Sauté the onion, garlic and dried red peppers in olive oil, just to add a bit of color to the oil. Add the celery and cook for about 5 minutes. Remove from the heat and set aside.
  • When the tripe is tender, add it to the pan with the other ingredients and stir over medium-high heat. Add the wine and reduce.
  • Add the tomato sauce, return to a simmer, and cover for about 30 minutes. Taste and add salt if needed.
  • Combine the grated parmesan cheese in a bowl with the optional herbs.
  • Serve the tripe topped with the cheese mixture.
