Texas Fried Ice Cream

Texas Dessert Fried Ice Cream

There’s something about fried ice cream that makes it irresistible! This colorful version is coated with Fruity Pebbles cereal. Your kids will love it!
Prep: 10 minutes
Cook: 1 minute
Chilling Time: 30 minutes
Total: 40 minutes
Servings: 6

Ingredients 

  • 2 cups Fruity Pebbles cereal
  • 6 scoops vanilla ice cream, about 1 pint
  • 1 quart oil, for frying
  • whipped cream, optional garnish

Instructions 

  • Line a baking sheet with parchment paper. Place the Fruity Pebbles on a large plate and reserve.
  • Use an ice cream scoop or cookie scoop to make 1 1/2-inch balls of ice cream. Quickly roll ice cream balls in Fruity Pebbles and place on the prepared baking sheet. Freeze immediately for at least 30 minutes or until hard.
  • Meanwhile, fill a deep fryer or medium saucepan with 3 inches of oil and heat to 375°F. Line a plate with paper towel and set aside.
  • Remove the balls from the freezer. Using a slotted spoon, lower 2 balls into the hot oil and fry for 10 seconds. Remove to the prepared plate and repeat for the remaining 4 balls.
  • Garnish with whipped cream and serve immediately.
