Flour Tortillas vs Corn Tortillas

Traditionally quesadillas are made with corn tortillas with crispy edges. Nowadays, it’s more popular and convenient to use flour tortillas, which is easier to cook. Either will work well and it’s a personal choice.

Ingredients You’ll Need

  • Corn Tortillas: We like the crispy texture with yellow corn tortillas. But you can use flour tortillas. 
  • Shredded Cheese: You can use Monterey Jack, Mozzarella, Mexican cheese blend, or cheddar.
  • Meat of Your Choice:  Use any of your favorite meat! Shredded chicken, leftover taco meat, steak or any other filling you’re craving. 
  • Oil: To prevent it from sticking. 
  • Your Favorite Toppings: Such as salsa, sour cream, and guacamole.

How to Make Corn Tortilla Quesadilla

  • Heat the skillet over medium-high heat. Brush oil onto the surface of the pan. Lay down the first tortilla.
  • Top it with cheese, meat, then add more cheese.
  • Place another tortilla on top and brush with oil. Cook the first side until crispy and golden, flip and cook the other side.
  • Remove from the skillet. Cut into haves and serve with your favorite toppings.

Tips & Tricks

  • Avoid using too much oil, which can make your quesadillas soggy.
  • Don’t stuff too much filling, otherwise, it might fall out. 

How to Store Leftover Corn Tortilla Quesadillas?

To store properly, wrap each tortilla in plastic wrap and store in your fridge for up to 3 days. 

Can I Reheat Corn Tortilla Quesadillas?

Yes you can! The key to reheating them is in the oven or air fryer at 425 degrees F for about 8 to 10 minutes. Or, if you’re strapped for time, try frying them in a skillet for 1 to 2 minutes over medium-high heat.

Easy Corn Tortilla Quesadilla Recipe

Ingredients 

  • 12 corn tortillas
  • 2 cups shredded cheese
  • 2 cups cooked meat of your choice
  • vegetable oil , for frying
  • your favorite toppings

Instructions 

  • Heat the skillet over medium-high heat.
  • Brush oil onto the surface of the pan. Lay down the first tortilla. Top it with 2-3 tablespoons of cheese, ¼ cup of meat, then top with another 2-3 tablespoons of cheese.
  • Place another tortilla on top and brush with oil. Cook the first side until crispy and golden, flip and cook the other side.
  • Remove from the skillet. Cut into haves and serve with your favorite toppings.
