Ingredients
- corn tortilla 8-inch diameter
- ½ cup grated cheddar cheese
- ¼ cup cooked black beans rinsed and drained
- 1 tablespoon chopped red bell pepper
- 1 tablespoon chopped red onion
- 1 teaspoon olive oil for brushing
- serving options such as guacamole, avocado, sour cream, and salsa
Instructions
- Warm the tortilla in a medium skillet over medium heat for about 30 seconds, flipping halfway.
- Sprinkle half of the tortilla with half of the grated cheese.
- Add black beans, bell pepper, and red onion on top of the cheese.
- Sprinkle the remaining cheese on top of the mixture, and fold over the other side of the tortilla to enclose the fillings.
- Brush the quesadilla with oil, then flip it with a spatula. Let the quesadilla cook until the bottom side is golden, about 1 minute.
- Flip again and then brush with oil. Cook until the second side is golden and crispy.
- Remove from the heat and transfer to a cutting board. Let it cool slightly and slice it into 3-4 pieces. Serve with toppings such as guacamole, avocado, sour cream, and salsa.
