What Is Leche Flan?

Leche flan is a traditional dessert from the Philippines. It’s similar to cream caramel and is almost always served at parties and family celebrations. Leche flan can also be used as a topping for frozen treats like shaved ice. 

Ingredients You’ll Need

  • egg yolks
  • condensed milk
  • milk
  • granulated sugar
  • vanilla extract

How to Make Leche Flan

  • Add egg yolks to a large bowl and beat with an egg beater or a fork.  Then add the condensed milk and mix until thoroughly combined. 
  • Pour in the fresh milk and the vanilla. Mix well to combine. 
  • Place the llanera mold on top of the stovetop over low heat.  
  • Add the granulated sugar in the mold and stir until the sugar melts and turns light brown in color. Note that if you can’t find a llanera, individual-sized metal pans can be used instead.
  • Spread the melted  sugar evenly on the flat side of the mold.
  • Wait for 5 minutes and then pour in the egg yolk and milk mixture.
  • Cover the top of the mold with foil.
  • Steam the mold for 30 to 35 minutes.
  • After steaming, cool the mold to room temperature and then transfer to the fridge to chill until ready to serve.

Leche Flan vs Creme Caramel

Filipino leche flan uses condensed milk instead of the cream included in typical creme caramel recipes. Leche flan is also richer compared to creme caramel which has a lighter texture. In addition to the ingredients, the preparation of these two desserts is also different. Creme caramel is typically baked in small molds or ramekins, while leche flan is baked in a shallow, oval shaped metal mold called a llanera. The sugar in leche flan is added to the llanera while with creme caramel, the sugar is cooked in a saucepan and then poured into each ramekin. 

Is Leche Flan And Custard The Same?

No. The key difference between leche flan and custard is that flan is topped with liquid caramel and is also steamed and served upside down.
