    What is Almond Paste?

    Almond paste is like marzipan but with a more grainy texture. It’s made by combining almond flour or meal with sugar, salt, almond extract, and a binder such as oil, beaten eggs, or corn syrup. It is used as a filling for cakes or a base for tarts. 

    Ingredients You’ll Need

    • almond flour
    • salt
    • powder sugar
    • almond extract
    • egg white

    How to Make Almond Paste

    • Combine the almond flour, salt, and powdered sugar in a food processor. Pulse several times to mix well. 
    • Pour in the almond extract and egg white. Pulse to form a smooth paste. 
    • Transfer the paste to a clean surface and roll into a log shape. Cover with plastic wrap and place in the fridge until you need it.

    Can I Make Almond Paste Without A Food Processor?

    Yes, you can make the almond paste by hand if you don’t have a food processor but the texture will not be as smooth. 

    Is There A Substitute For Almond Paste?

    You can ground any kind of nut flour to make a nut paste, including macadamia, pistachio, or pecan. However, this will give you a very different taste and cannot replicate the taste of almond paste in a recipe.
