What is Vermicelli?
Rice vermicelli noodles are made from rice flour and water. Although the noodles are actually gluten-free, starch is sometimes added depending on the brand. Vermicelli are used in Asian cuisines including in China, Malaysia, Indonesia, Thailand and Vietnam.
In Malaysia and Singapore, they are called bee hoon, while the Filipinos prefer bihon and the Vietnamese say, bun. Stateside you’ll see them labeled as rice noodles or rice sticks.
Ingredients You’ll Need
- rice vermicelli
- chicken breasts, cubed
- fresh bean sprouts
- cornstarch
- cooking oil
- garlic
- green onions
- red chili (optional)
- For the seasoning sauce: soy sauce, water, sugar, white pepper
How to Make Fried Rice Vermicelli
- Soak the rice vermicelli in warm water until softened. Then drain using a colander.
- Coat the chicken cubes lightly with cornstarch.
- Combine the seasoning sauce ingredients in a small bowl. Set aside.
- Place a wok or nonstick skillet on high heat. Add the cooking oil and allow it to heat up fully before adding the minced garlic. Stir-fry until the garlic is light brown in color. Toss in the chicken and stir-fry until the cubes are white on the surface.
- Next, add the rice noodles and the seasoning sauce. Stir continuously to mix the ingredients and coat everything in the sauce. Continue to stir-fry for 2-3 minutes or until the noodles are soft.
- Throw in the bean sprouts and scallions. Stir-fry until the sprouts are cooked. Serve and enjoy!
Difference Between Vermicelli Noodles and Rice Noodles
The easiest way to differentiate between the two is by the flour used. Vermicelli noodles are made using wheat flour, while rice noodles contain rice flour (which makes them gluten-free). Secondly, where vermicelli noodles are round, rice noodles are actually flat in appearance.

Is Vermicelli Healthier Than Rice?
Unfortunately, Vermicelli noodles are made from flour which makes them high in carbohydrates and low in fiber. In fact, one pound of noodles contains approximately twice the calories as the same amount of rice. Noodles work best as part of a balanced diet.
How To Prevent Rice Vermicelli From Sticking To The Wok Or Skillet?
Use a nonstick wok or skillet whenever possible to prevent sticking. Heat the pan until smoke starts to swirl out of it. This means the skillet (and oil) are ready.
What is Singapore-Style Vermicelli?
A delightful yellow dish of stir-fried rice noodles, curry powder, vegetables, scrambled eggs, and another cooked protein (usually chicken, beef, char siu pork, or prawns).
Fried Rice Vermicelli Recipe
Ingredients
- 8 oz rice vermicelli
- 8 oz boneless skinless chicken breasts, cubed (you can use tofu for a vegetarian version)
- 1 cup fresh bean sprouts
- 1 tsp cornstarch
- 3 tbsp cooking oil
- 3 cloves garlic minced
- 3 green onions or scallions, cut into 2-inch lengths
- Optional red chili
Seasoning Sauce:
- 4 tbsp soy sauce preferably low sodium
- 4 tbsp water
- 1 tbsp sugar
- pinch white pepper freshly ground (or black pepper)
Instructions
- In warm water, soak the rice vermicelli for 30 minutes or until softened. Then drain using a colander.
- Briefly rinse the bean sprouts and set aside to drain. Coat the chicken cubes lightly with cornstarch, which will help to tenderize the chicken.
- Combine the seasoning sauce ingredients in a small bowl. Set aside.
- Place a wok or nonstick skillet on high heat. Add the cooking oil and allow it to heat up fully before adding the minced garlic. Stir-fry until the garlic is light brown in color. Toss in the chicken and stir-fry until the cubes are white on the surface.
- Next, add the rice noodles and the seasoning sauce. Stir continuously to mix the ingredients and coat everything in the sauce. Continue to stir-fry for 2-3 minutes or until the noodles are soft.
- Throw in the bean sprouts and scallions. Stir-fry until the sprouts are cooked (another minute or so).
- Serve and enjoy!
Notes
- Remember that you can easily substitute the chicken for pork, beef, shrimp, scallops, or a combination.
- Feel free to experiment with other kinds of noodles (Chow Mein, egg noodles, and Lo Mein are all great alternatives).
