What Is Coconut Cream?

Coconut cream is the thick layer that forms on top of chilled coconut milk. It has a rich coconut flavor and a creamy texture. Coconut cream can be made into whipped cream or added to smoothies, savory dishes, or desserts. 

Ingredients You’ll Need

  • full-fat coconut milk
  • vanilla extract
  • maple syrup
  • lemon zest
  • pinch of salt
  • lemon juice

How to Make Coconut Cream

  • Scoop the coconut solids from the top of the coconut milk and place in the bowl of a stand mixer fitted with the whisk attachment. Note that if the solids haven’t separated from the coconut water in the can, the coconut cream will not whip. Set the coconut water aside and use for another recipe. 
  • Beat the coconut solids on high speed until it begins to thicken and peaks form. Don’t over-mix or the cream will become too soft.
  • Add the maple syrup, vanilla, salt, and lemon zest, and mix until combined. If the coconut cream is very thick, add 1 to 2 tablespoons of lemon juice until it reaches the desired consistency.

  • 2 cans full-fat coconut milk, refrigerated
  • 1 tablespoon vanilla extract
  • 2 tablespoons maple syrup, or more to taste
  • 1 tablespoon lemon zest
  • pinch of salt
  • 1 tablespoon lemon juice, optional
